Apple pie is a fall season classic and one of the more healthy dessert one can make, and it is even better homemade!
This recipe is made in two parts, first is the homemade crust and the second is the hardy pie filling.
Apple Pie Crust:
1TBS ground flaxseed
3 TBS water
3/4 cup brown rice flour
3/4 cup tapioca flour/starch
1cup coconut flour
1/4 cup garbanzo bean flour
3/4 cup sugar or honey or coconut sugar
1 TBS backing powder
1 Tsp xanthan gum
1/2 Tsp salt
1 1/2 TBS cinnamon
2/3 cup spectrum Organic Shortaning
3/4 cup vanilla rice milk or almond milk (plain or vanilla)
To start preheat your oven to 350º. Next in a small bowl put your flaxseed and water together and set aside.
Next pour all your dry ingredients into your mixer. Attach your whisk mixer attachment if you have one and mix on low.
Next take off the whisk mixer and add your kneading hook. Turn the mixer on medium low, slowly add in the vanilla, ground flaxseed mixture, shortening, and last the milk. Let it all kneed together.
Now take 3/4 of the mixture out of the mixing bowl and roll it out and place in in the pie pan. Since it has shortening in it you will need to sprinkle your rolling surface and roller with a flour of your choosing and work fast. If part of the fall off you can alway hand press the dough in the pie pan. Set aside and work on the pie filling.
Apple Pie filling:
10 small apples pealed and cored and sliced
1 1/2 lemon juice
1/3 cup sugar or honey or coconut sugar
2 TBS instant tapioca pearls
3 TBD cinnamon
2 TBS vanilla
3 TBS brown sugar
2 TBS Smart Balance Flaxseed Oil buttery Spread melted
1 cup Udi’s Gluten Free Vanilla Granola
In a large bowl toss your apples with the lemon juice and let them sit while you mix the other ingredients.
In your mixer mix all the dry ingredients including the granola BUT not the brown sugar. Next add in the vanilla.
Toss the mixer together with the apples and fill your pie crust with apple mixture. Now take your remaining pie crust roll it out cut strips and add to the top of the pie. Place it in oven. Cook it for 50 minutes take it out brush with the buttery spread and sprinkle the brown sugar on the top place back in the over and cook for another 10 or 15 minutes. Take out cool and enjoy!
