Stuffed Zucchini


Now that fall is in full swing I need to use up all my zucchini’s. So while I was out picking the remaining zucchini I found 2 that had been hiding and as you can imagine they where HUGE! So I started thinking what can we do with zucchini’s that are this big?!?!

When zucchini get to big they loose their flavor and gain a lot of water, but none the less they still have good nutrition for you. So back to my dilemma, what to make with them? After some thinking I came up with stuffed zucchini. I have made lots of stuffed zucchini but never any this size so I wanted to come up with a great recipe that I could use some of my homemade sauce with too!

I came up with a ground turkey meal ball mixer topped with my homemade tomato sauce and a dairy free, soy free, vegan almond cheese! I have to say the flavor in this turned out amazing!

What you will need:

1 large or 2 medium zucchini’s

1 package of ground turkey (I used red bird)

1 can of black beans

1 small onion

2 TBS of garlic salt

1 TBS of fresh ground pepper

2 fresh jalopinos

oil of your choosing (used sesame seed oil)

1 jar of tomato sauce (or one of your own homemade jars of tomato sauce)

1 block of Lisanatti Foods Almond Mozzarella Style cheese alternative

1 TBS of gluten free worchestershire sauce


To start preheat your oven to 350º and cut your zucchini in half long ways with a spoon scoop out the insides and place in a bowl. Brush on the oil inside and lightly on the out side of the zucchini and place on a backing sheet face down and back for about 15 to 20 minutes. Don’t let them over cook, you want then slightly soft but not mushy as they will need to cook a second round.

Next prepare it is time to get the meat to marinate with you wait. Finely chop the onions, jalopenos, and zucchini insides, mix in to the meat. Next mix in the worchestershire sauce, ground pepper, garlic salt and black bean. Put the mixture back in the frige while the zucchini’s cook. Don’t for get to grate your cheese and set it aside.



IMG_6342Once the zucchini’s are slightly soft pull then out and let them cool while you cook the meat. Turn your wok to high with a little oil in it. Once it is hot put your meat mixture in and cook it fully, Once it is cook flip your zucchini’s over and full with the meat mixer, top with the tomato sauce, and cheese. Put the whole thing back into the oven and cook for about 10 to 15 more minute or until the cheese is slightly browned. Pull it out of the oven let cool slightly and serve hot! This meal pairs well with a light salad, and is perfect for having guest over it is easy to make lots of!
