I love fall baking! There are so many yummy treats with apples! These crisp apple cinnamon apple muffins are quick to make and taste great!
- 2 Chopped apples
- 1 TBS ground flaxseed
- 3 TBS water
- 1/4 cup coconut oil liquified or olive oil
- 1 cup honey
- 1 1/2 tsp baking powder
- 1/2 tsp baking soada
- 1/2 tsp xanthan gum
- 4 TBS cinnamon
- 1 TBS vanilla
- 1/8 tsp salt
- 1/3 cup coconut flour
- 3/4 cup white rice flour
- 1/2 cup tapioca flour
- 1/4 cup garbonzo bean flour
- 3 TBS unsweetened applesauces
- 1/4 cup non-corn based powder sugar optional
Preheat the oven to 350º. Grease or line 12 cup muffin pan.
Mix the ground flaxseed and the water together and let it sit.
Mix together coconut flour, white rice flour, tapioca flour, garbonzo bean flour, baking soda, baking powder, xanthan gum, cinnamon and salt.
Next mix in the vanilla, apple sauce, coconut oil, and honey, and the ground flaxseed mixture.
Add in the chopped apples.
Fill your muffin pan place in the oven and bake for about 20 minutes.
Take out once baked place on a cooling rack and sprinkle with non-corn based powder sugar and enjoy!
