Pound cake is one of my favorite cakes! It’s so yummy and moist and gives you that happy feeling! So here is my recipe!
1/2 cup (or 6 Tbs) butter of your choosing (I use Earth Balance Olive Oil spread)
1/2 cup dairy free cream cheese (I use Tofutti brand)
3/4cup sugar of your choosing (I use cane sugar or honey)
1 Tbs vanilla
2 cups almond flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp ground ginger
1 Tbs cinnamon
4 Tbs almond slices
Preheat your oven to 350º. Line your loaf pan with parchment paper.
Mix together almond flour, baking powder, salt, ginger, and cinnamon. Set a side.
Mix butter, cream cheese, sugar and vanilla with a mixer until smooth and creamy. Then add in the eggs one at a time a mix well.
Slowly add in your dry mixer and mix well.
Lastly add in 3 Tbs of the almond slices and gently mix. Pour mixture into a loaf pan add the last 1 Tbs of almond to the top and bake for about 45 to 60 minutes.
Once a tooth pick comes out mostly clean (remember this is a moist cake so the tooth pick will not come out 100% clean and if it does the cake will be to dry), let cool remove from loaf pan and let it cool on a cooling rack. Slice and serve!
